Savory Herb Roasted Chicken with Garlic Mashed Potatoes
Introduction

Ingredients
- 1 whole chicken, about 3-4 pounds
- 1/4 cup olive oil
- 2 tablespoons chopped fresh rosemary
- 2 tablespoons chopped fresh thyme
- 2 tablespoons chopped fresh sage
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cloves garlic, minced
- 4-6 large potatoes, peeled and cubed
- 1/4 cup butter
- 1/2 cup milk or cream
- Salt and pepper to taste
Instructions
Preparing the Chicken
- Preheat your oven to 425°F.
- In a small bowl, mix together the olive oil, herbs, salt, pepper, and minced garlic.
- Rinse the chicken inside and out and pat dry with paper towels.
- Carefully loosen the skin from the breast and thighs of the chicken, being careful not to tear it.
- Rub the herb mixture under the skin of the chicken, making sure to coat the entire bird.
- Place the chicken on a roasting pan and roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F.
- Let the chicken rest for 10 minutes before carving.
Preparing the Garlic Mashed Potatoes
- While the chicken is roasting, peel and cube your potatoes.
- Place the potatoes in a large pot and cover with water.
- Bring the water to a boil and cook the potatoes until they are fork-tender, about 20 minutes.
- Drain the potatoes and return them to the pot.
- Add the butter and milk or cream to the pot and mash the potatoes until they are smooth and creamy.
- Season with salt and pepper to taste.
Serving
